“There’s nothing better on a snow day than a warm soup or chili. This Taco Soup recipe is perfect for days like today. It is full of protein and fiber, which keeps you full for a long time, and is very simple to make. Aside from the higher sodium (which isn’t much of an issue if you train hard, are well hydrated, and don’t have preexisting blood pressure issues), this is pretty much a perfect dish. I’d rather you eat it by itself, but tortilla chips, cheese, and sour cream sure do go well with it too…But try to resist! INGREDIENTS 1 lb ground beef (preferably relatively lean grassfed) 2 tbsp homemade taco seasoning 2 tbsp homemade Ranch seasoning 1 large can of corn 3 cans of diced tomatoes and green chiles (Rotel) 1 can of white hominy 2 cans of low sodium pinto beans 1 can great northern beans DIRECTIONS Brown the ground beef, drain, and then combine all ingredients in a large pot on the stove and heat up for about an hour before serving.
